Starch-Free Apricot Pie

This is a lovely alternative for people with a sweet tooth who pick and choose the specific carbohydrates in their diet.  For an 8 inch pie, use maybe 7-8 apricots.  Cut the fruit into chunks and simmer in 1/3 cup agave nectar with 2 tbs. butter, 1 tsp. vanilla and 1/4 tsp. cinnamon.  When the fruit lets go of its juices, in only a couple of minutes, strain.  Return the sweet buttery juices to the stove and cook on low heat.  After the liquid begins to thicken add a splash of cream or substitute (I used a couple tbs. coconut concentrate) and cook down until the mixture is syrupy.  Add only the teeniest dab of lime or lemon juice.

Comfort Food

When I’ve tired myself out I just want to EAT!
Eat some sweets. Eat more. Then just to keep eating for the sake of eating.
It’s not healthy. It makes me ill. But I do it as if I had a self-destructive streak.
Is it not self-destructive to work and work and work nonstop?
THAT’S what’s not healthy. That’s why I voraciously want comfort foods
Mmmmmmmmmmm.

Healing Crohn’s With Diet and Other Tools

For the information of anyone suffering with Crohn’s Disease, I have been able to remain drug-free with the following routine (thanks to Dr. Paul at the Whole Health Center in Lone Tree, Colorado). This is what I have been doing to get rid of pain, arthritis, and diarrhea:

No carbs, no sugar, no milk. This is a variation of Elaine Gottschall’s Specific Carbohydrate Diet. However, I have eliminated honey for the time being. I try to not eat too much fruit, butter, cheese, and I avoid the diet soda that are permissible on the SCD diet. The more veggies, particularly cooked veggies the better. (I love carrots, steamed greens, peas, lettuce, avocado, peppers, celery, squashes). Meat is good too, as are eggs and fish is a good less acidic option. And ALMOND BREAD! (The recipe is available through SCD cookbook sources.) I try to eat as many alkaline-forming foods as I possibly can (basically vegetables and almonds, and lemon-water is wonderfully alkalizing as well.) But the meat gives me the umph I need to feel satisfied. If sweetness is needed, cooked fruit such as applesauce is best, and a few berries are okay for me too. Read the rest of this entry »

Unconscious Eating

Sometimes I completely lose control and want to eat just for the sake of eating. When I’m working on my thesis. When I’m relaxing. Eating provides more than just nutrients and sustenance, it provides comfort, pleasure, and a surge of sugared energy.

It fattens me. It makes me unhappy. It’s an impulse that my mind can’t thwart. I am a locomotive stopping at nothing until a cup of granola is down pat. Or pie. Or doughnuts. Things delicious. I am a slave to deliciousness.
